Vegan Chocolate Cake with Candied Pears


INGREDIENTS
  • - 200 gr Soy cream
  • - 450g dark chocolate
  • - 1 tablespoon agave syrup
  • - 150 g candied pears
  • Waffles:
  • - 2 egg whites
  • - 50g icing sugar
  • - 30 grams of rice flour Probios
  • - 60 grams of chopped almonds
  • - 30 g melted Butter
INSTRUCTIONS
  1. Heat the cream, bring it to a temperature of 40 °, add the chocolate and agave syrup.
  2. Mix well by melting the chocolate evenly. Stir in the diced candied pears.
  3. Pour in a mold and let cool in the fridge for at least 2 hours.
  4. Meanwhile prepare the waffles: lightly beat the egg whites with the icing sugar, add the rice flour and the almonds grounded into flour and finally the melted butter.
  5. Take a baking sheet with parchment paper and with the help of a spoon, spread the dough getting thin circles and bake at 180 ° for 10 minutes.
