Crepes with Cheese Mousse and Lemon

  1. Put the honey in a bowl, add the thyme leaves, washed and dried, cover and let stand overnight.
  2. Mix with a whisk the flour with milk and white wine (or apple juice).
  3. Combine the remaining ingredients and blend.
  4. Let the mixture stand for about an hour.
  5. Mix the cottage cheese with yogurt and flavor to taste with lemon juice and zest.
  6. Store in the refrigerator in a bowl covered with plastic wrap.
  7. At the last moment, cook the crepes.
  8. Heat a non-stick pan with a diameter of 24 cm.
  9. Grease the bottom of the pan with a little butter, cook the pancake, put it in a hot dish and add a bit of filling in the center, sprinkle with a little honey and serve immediately.
