INGREDIENTS

- - 5 sprigs of thyme
- - 200g ricotta cow cheese
- - 125g of greek yogurt
- - 1 lemon
- - 125g of white flour wheat 0
- - 2 egg
- - 1 tablespoon of butter
- - 60ml of plain yogurt
- - 125ml of dry white wine
- - 1 tablespoon of brown sugar
INSTRUCTIONS
- Put the honey in a bowl, add the thyme leaves, washed and dried, cover and let stand overnight.
- Mix with a whisk the flour with milk and white wine (or apple juice).
- Combine the remaining ingredients and blend.
- Let the mixture stand for about an hour.
- Mix the cottage cheese with yogurt and flavor to taste with lemon juice and zest.
- Store in the refrigerator in a bowl covered with plastic wrap.
- At the last moment, cook the crepes.
- Heat a non-stick pan with a diameter of 24 cm.
- Grease the bottom of the pan with a little butter, cook the pancake, put it in a hot dish and add a bit of filling in the center, sprinkle with a little honey and serve immediately.
