- - 500g wholemeal spelt Probios
- - Extra virgin olive oil Il Nutrimento q.b.
- - 1 jar Eggplant Pugliese Il Nutrimento
- - Salt and pepper q.b.
- - 3 Eggs
- - bio basil
- - organic tomatoes
INSTRUCTIONS
- Prepare the mixture for the dough by combining flour, eggs a little water, knead to a soft dough and roll out with a rolling pin or pasta machine.
- Create squares on the rolled out dough onto which You arrange the well drained apulian eggplant.
Close each square as You prefer ... I prefer to form ravioli. - In the meantime, I put the water to boil with the addition of a teaspoon of olive oil and salt.
- In a skillet I cook the organic tomatoes with a drizzle of oil.
- As soon as the water boils, cook the ravioli, You throw them in the water (in my case) and they will be ready as soon a the come back to the surface, then sauté with tomatoes.
- Then arrange on the dishes with a fresh bio basil leaf to flavor.
