INGREDIENTS
- - 350g Spelt Spaghetti
- - 1kg courgettes
- - 120g taleggio cheese
- - 20 Black Olives
- - 2 shallots
- - 1 rosemary sprig
- - 4 tablespoons extra virgin olive Oil
- - Salt
- - pepper
INSTRUCTIONS
- Clean the courgettes, remove the extremities and chop them thinly. Chop the shallots too and place those two ingredients in a non stick pan with some olive oil and rosemary. Add salt and cook on a low heath with the lid on, stirring once in a while. They will be ready after 15 minutes.
- Boil the pasta according to the directions on the packet. Chop the taleggio and divide the olives in half; combine them to the cooked courgettes. Drain the pasta, stir the veggies in and let them sauté on the stove. Add salt and pepper to taste and serve.
