INGREDIENTS
- - 150 g flour
- - 200 g stracchino
- - 2 eggs
- - 100 g of spinach
- - 1 tablespoon chopped parsley
- - 1 pinch of baking powder
- - 20 g of butter
- - 150 ml of milk
- - Extra virgin olive oil
- - Salt
- - Pepper
INSTRUCTIONS
- Stir with a whisk the flour with the milk and the eggs, being careful not to form lumps. Then add the melted butter, baking powder, parsley, a pinch of salt and pepper; then add the spinach leaves cutted into thin strips. You have to get a rather consistent batter.
- Heat a thick-bottomed pan with 2 tablespoons of olive oil and cook the mixture by spoonfuls getting pancakes about 7-8 cm in diameter. Cook over moderate heat for one or two minutes, or until start to form bubbles on the surface. Turn over and cook for another minute, if necessary, pour in more oil.
- Reduce the soft cheese in slices. Then pile the pancakes on dishes, inserting between the one and the other a slice of cheese that will melt slightly with the heat. Serve with a salad to taste.
