Zucchiniballs

INGREDIENTS
  • - 1 kg zucchini
  • - 200 g of feta
  • - 50 g of cheese
  • - 2 potatoes
  • - 3 yolk
  • - 1 tablespoon of white flour
  • - 2 tablespoons of breadcrumbs
  • - 1 bunch of mint
  • - salt
  • - pepper
  • - flour
  • - Oil
INSTRUCTIONS
  1. Wash and clean the zucchini, grate with a grater with large teeth. Season with salt and leave to marinate for an hour.
  2. Cook the potatoes with the skin. Peel, mash and add them to the drained zucchini.
  3. Beat the eggs and mix with zucchini and potatoes.
  4. Clean and chop the mint, lightly toasted bread crumbs, crumbled feta.
  5. Add all the mixture, mixing the flour. Pepper to taste, stir and refrigerate for about an hour.
  6. Form with your hands into small balls, roll them in flour and fry in hot oil, brown them on both sides. Serve hot.
