INGREDIENTS
- - 1 kg zucchini
- - 200 g of feta
- - 50 g of cheese
- - 2 potatoes
- - 3 yolk
- - 1 tablespoon of white flour
- - 2 tablespoons of breadcrumbs
- - 1 bunch of mint
- - salt
- - pepper
- - flour
- - Oil
INSTRUCTIONS
- Wash and clean the zucchini, grate with a grater with large teeth. Season with salt and leave to marinate for an hour.
- Cook the potatoes with the skin. Peel, mash and add them to the drained zucchini.
- Beat the eggs and mix with zucchini and potatoes.
- Clean and chop the mint, lightly toasted bread crumbs, crumbled feta.
- Add all the mixture, mixing the flour. Pepper to taste, stir and refrigerate for about an hour.
- Form with your hands into small balls, roll them in flour and fry in hot oil, brown them on both sides. Serve hot.
