Almond and Chocolate Pastries

INGREDIENTS
  • -100g flour
  • -100g oat flour
  • -50g almond flour
  • -80g butter or Spalmolio
  • -2 eggs
  • -3 tablespoons brown sugar
  • -2 tablespoon cocoa powder
  • -1 bag baking powder
  • -milk
  • -cinnamon powder
INSTRUCTIONS
  1. Sift the spelt flour, the oat flour and the almond flour in a bowl. Then combine them to the cocoa powder, the brown sugar, the baking powder and a pinch of cinnamon. On a pastry board, create a flour fountain and place the softened butter or Spalmolio and the eggs in the middle.
  2. Knead adding milk or oat milk as needed to obtain a smooth and consistent dough.
  3. Level the dough to make a 1cm high layer and, with a mould, create some 5cm diameter disks. Use the leftover dough to create strips and create some rings.
  4. Place the pastries, well separated one to each other, on a baking tray covered with parchment paper, brush them with some milk or oat drink and bake them at 180°C for 10-15 minutes. Let them cool down completely, then serve them with some apple and orange slices.
