INGREDIENTS
- - 400 g apples
- - 180 ml of soy, milk
- - 80 g flour
- - 4 tablespoons sugar
- - 1 teaspoon fennel seeds
- - 1 teaspoon of baking powder
- - 5 tablespoons extra virgin olive oil
- - Salt
INSTRUCTIONS
- Put 2 tablespoons of sugar with a tablespoon of water to caramelize in a saucepan over low heat; as soon as it assumes a light brown color, pour the heated soy milk and stir until the sugar has melted completely.
- Mix the flour with the soft compound to obtain a creamy batter. Stir in the baking powder, a pinch of salt and let stand for about an hour.
- Halve the apples, remove the core, cut into slices of 1 centimeter and dip them in the batter.
- Heat the oil in a frying pan and brown the apples side by side, turning only once. Drain and keep them warm in oven. When all the pancakes will be ready, sprinkle with a mixture of fennel seeds (or cinnamon) and the remaining sugar. Serve hot
