Hot Chocolate Pie with Apple Sauce

  1. Chop the chocolate and transfer it into a metal basin, then add brown sugar, the soy butter cut in littel peices and the velvety tofu.
  2. Place the pan in a water bath in a pot with water on the fire low and, once the chocolate is melted, add the flour blending with a blender to get a smooth and homogeneous dough.
  3. Distribute the dough into 4 metal round molds about a diameter of 8 centimeters, oiled and floured. Let cool completely in the refrigerator.
  4. Peel the apples, cut them into pieces and place them in a saucepan with the bay leaf, saffron and a piece of lemon peel (remove the inner white part). Cover with a lid and simmer for at least a minimum of ten minutes, stirring often so the fruit does not stick to the bottom. Remove from the heat, take out the bay leaves and peel, then puree the apples with a hand blender obtaining a smooth cream. Keep it warm.
  5. Bake the pies to 200 ° C for about 10 minutes. Let them stand for a minute and then pass a boxcutter between the metal edge of the molds and the pies but do not turn them out.
  6. Pour the apple cream on the bottom of the dessert dishes, put the pies, still in the molds, on it still and decorate as desired with currants and mint. Take the molds gently of and serve the desserts immediately when they are still hot.
