INGREDIENTS
- - 150 g medlar
- - 120 g of strawberries
- - 60 g of almond flour
- - 50 g of rice flour
- - 50 g of butter
- - 50 g of icing sugar
- - 3 tablespoons brown sugar
- - 3 egg whites
- - 1 baking powder
- - 0.50 lemon juice
INSTRUCTIONS
- Preheat the oven to 180 ° C.
- Peel the medlar, cut them in half lengthwise and cut each piece in two segments. Dress them with the lemon juice, one tablespoon of brown sugar and let them marinate as you proceed with the preparation.
- Mix in a bowl the rice flour and the almonds with the icing sugar and the baking powder. Beat the egg whites with a fork (to be mounted slightly but not too stiff) and gently add them to the flour. Add slowly the melted butter in a double boiler and work the mixture vigorously for a few minutes.
- Grease and flour 6 small moulds and fill two thirds with the mixture.
- Cut the strawberries into 4 lengthwise and alternate the slices of medlar, and strawberry on the surface of the dough cupcakes, forming a decorative motif.
- Sprinkle with brown sugar and bake for 15-20 minutes until the pies do not become golden. Let them cool down before removing from the molds.
