Tyrolean Omlette with Bananas, Raisins and Pine Nuts

INGREDIENTS
  • - 200 g of flour
  • - 4 eggs
  • - 1 banana
  • - 2 tablespoons of sugar
  • - 2 tablespoons of raisins
  • - 2 tablespoons pine nuts
  • - 4 teaspoons of honey
  • - 30 g of butter
  • - 500 ml of milk
  • - 1 drop of rum
  • - Peanut oil
  • - Icing sugar
  • - Jams. normal and type fruit alive
INSTRUCTIONS
  1. Put the raisins to soak in a little water diluted with rum or other liqueur to taste. Golden pine nuts in a small frying pan.
  2. Mix in a bowl with the milk, sugar and flour until mixture is smooth and homogeneous. Add 2 eggs and the yolks of the other 2 (reserving the egg whites) and mix them with care.
  3. Beat the egg whites until very stiff and embed them gently into the mixture, mixing gently to prevent unmount.
  4. Heat a skillet and grease it well with a film of oil. Pour half of the batter and cover with half a sliced banana and half with raisins squeezed. When it begins to thicken, with a spatula, divide the frittata into 4 wedges and Turn them to continue cooking. Sprinkle 2 teaspoons of honey and half the butter. When they begin to caramelize slightly, cut the slices into smaller pieces and put them in a dish, keeping them warm. Cook in the same way the rest of the batter.
  5. Gather all the sweet pancakes, sprinkle with powdered sugar, pine nuts and serve immediately. If you want, put 1 to 2 spoonfuls of jam on the edges of the plate.
