INGREDIENTS
- - 250 g of wheat flour type 0
- - 150 g of wheat flour
- - 300 g of grapes, black
- - 300 g of grapes, white
- - 50 g of coconut flour
- - 10 g of yeast
- - 3 tablespoons of brown sugar
- - 1 tablespoon honey
- - Extra virgin olive oil
- - ½ teaspoon of salt
INSTRUCTIONS
- Dissolve yeast in 220 ml of warm water to dissolve it completely, then also melt the honey and add 200 g of white flour, deriving a batter. Cover and let stand for 45 minutes.
- Mix the remaining flour and whole wheat flour with salt and coconut flour (or almond). Then embed them along with 3 tablespoons of olive oil to the batter, pouring a little water if necessary, obtaining a uniform and smooth mixture . Engrave and place it in a container with a lid (such as a pan) lined with parchment paper, wrap the whole thing with a cloth and let rise for at least 90 minutes.
- Shell the grapes keeping separate the two colors, then cut each grape in half lengthwise and remove the seeds.
- Divide the yeast dough into 2 parts, flour carefully and roll them out obtaining 2 sheets from 30x40 cm. Place the dough in a lightly oiled baking pan (or covered with a sheet of baking paper) and cover evenly with rows of grapes blacks alternating with empty rows.
- Cover with the other sheet and form the rows of white grapes in correspondence to the empty spaces left in the first sheet.
- Sprinkle the surface with sugar, cover with a cloth and let rise for at least 30 minutes. Then bake the cake at 200 ° C for about twenty minutes. Let cool before serving.
