Penne with Avocado Pesto

INSTRUCTIONS
  1. Peel the avocado and wash the basil leaves.
  2. Put everything in a blender, along with tofu, pine nuts and olive oil, you add a little at a time, right down to get a creamy pesto.
  3. Cook the pasta and in the meantime, prepare a few basil leaves and slices of avocado to garnish.
