INGREDIENTS
- - 250 g of cherries
- - 12 medlar
- - 1 lemon
- - 50 g of pistachios
- - 1 tablespoon of acacia honey
- - 1 tablespoon sugar
- - 1 tablespoon of powdered sugar
INSTRUCTIONS
- Grate a teaspoon of lemon zest, then squeeze the juice and mix only this to the sugar to dissolve.
- Peel the medlar, cut them in half and season immediately with the just sweetened lemon juice, cover and store in refrigerator.
- Mix the grated zest with honey and add the pitted cherries, then blend it all up to reduce it in a grainy sauce. Keep this in the fridge too.
- Finely chop the pistachios and mix with powdered sugar, adding a few drops of water necessary to form a creamy consistency.
- Fill the medlars with the pistachio stuffing and place them on the cream of cherries already arranged in the dishes; If you want you can garnish with lemon slices and serve immediately.
