INGREDIENTS
- - 120 g Dark Chocolate
- - 2 eggs
- - 4 capsules of cardamom
- - 300 ml of milk
- For the coulis
- - 250 g strawberries
- - 1 lemon
- - 2 spoons of Brown Sugar
INSTRUCTIONS
- Cut the chocolate into small pieces, place it in a heat-resistant container with the milk and let it melt in a bain-marie. At the end, mix carefully to obtain a uniform mixture.
- Obtain the seeds from the cardamom capsules and crush them finely. Then, add the powder derived from the eggs and beat the whole thing for one to two minutes. After this time, mix the chocolate milk with cold care.
- Spread the mixture into 4 wet pudding molds, then place them in the basket, cover them with a sheet of baking paper and cook them for about 20 minutes. At this point arrange them on a tray and, as soon as possible, let them cool in the refrigerator for an hour.
- Obtain a teaspoon of grated rind from the lemon and then squeeze it. Afterwards, clean the strawberries, putting aside 4 of them for decoration. Slice and season them with brown sugar, zest and a sprinkling of lemon juice. Leave them to marinate for an hour in a cool place. Just before serving the desserts, blend them very finely, obtaining a smooth sauce. If you prefer, pass it through the strainer to remove the seeds.
- Dip the molds into hot water for a few seconds, without making the desserts wet, or remove the edges from the mold with a small knife. Tip the desserts over on the dishes, decorate them with the strawberries kept aside and accompany them with the coulis.
